Probably should have mentioned when I posted this before that it fascinates me because I write, in The Ocean at the End of the Lane, about the healthy cherry-red skin colour of the man who kills himself in a car, by carbon monoxide poisoning; and was interested to realize that it keeps meat red (and stops it going grey as it ages) by a very similar mechanism.
(The reason Carbon Monoxide is banned in many other countries is, of course, because it masks the normal aging and greying process of the meat.)
