Does that mean Aziraphale changed ranks over time or is being a cherub and principality not mutually exclusive?

Aziraphale was a cherub at the time of Eden. He was a Principality afterwards. (Whether that was a promotion or a demotion depends on whatever angelic hierarchy you subscribe to, I suppose.)
Marketing material is just that though.
